Sun-dried Tomato & Mozzarella Slices

A tasty, quick and easy snack or starter

Ingredients:

Ciabatta
Jar of sun-dried tomatoes
Mozzarella
Pesto

Method

  • Pre-heat the oven to a moderate temperature - about 180C / 350F / Gas Mark 4
  • Slice the Ciabatta loaf into 1 inch thick slices and arrange on a baking tray
  • Spread the Ciabatta with a generous helping of pesto
  • Chop the sun-dried tomatoes lengthways and arrange a few pieces diagonally over the Ciabatta – you can be as generous as you want here
  • Slice the mozzarella into strips and lay over the sun-dried tomatoes at an angle
  • Heat in the oven until the mozzarella begins to go brown – about ten minutes
  • Eat while still warm

Altenatives

Try other types of bread, such as olive bread.  Any type will do, but those that you can slice into individually portioned ovals work best for presentation.
