Courgette & Tomato Bake


4 medium sized cougettes, sliced
6 medium sized tomatoes, sliced
1 clove garlic, crushed
2 tbs olive oil
1 tbs chopped organo
4 tbs Parmesan cheese, grated
4 oz Cheddar cheese, grated
Salt & ground pepper



  • Fry courgettes in oil until golden both side
  • Crush garlic and add to pan for last minute
  • Then layer courgettes & sliced tomatoes in a gratin dish, sprinkling parmesan, oregano, S + P over each layer in turn
  • Top with grated cheddar cheese
  • Bake for appox. 30 mins in a hot oven (180°C)

To Serve

Serve with salad, new potatoes and crusty bread.
