Ribbons of Courgette Spaghetti

To create ribbons with your courgette, peel lengthways with a potato peeler.

Serves 2


200g dried spaghetti
2 tbsp olive oil
1 small onion - finely chopped
1 tsp chopped garlic
1 medium courgette - cut into ribbons
Handful of mushrooms - sliced finely (optional)
White wine
Salt and ground black pepper
Single cream - small pot
Freshly grated parmesan



  • Heat the oil and cook the onion and garlic until softened
  • Meanwhile, bring a large pan of water to the boil and add the spaghetti
  • Stir in the mushrooms and courgette to the onion and cook for a few minutes
  • Season with salt and pepper
  • Add a few glugs of white wine and simmer until reduced by half
  • Add the cream - as much as you like, but don't make it too runny
  • Add a couple of tablespoons of grated parmesan
  • Add the cooked spaghetti and heat through
  • Serve with extra parmesan sprinkled over

This recipe is also great using broad beans instead of courgettes. The mushrooms are optional.
