Spicy Lamb & Feta Burgers with Salsa

Serves 4

For the burgers:


450g lean lamb mince
1 clove garlic - finely chopped
1/4 tsp ground paprika
1 tsp ground allspice
1/2 tsp cumin powder
4-4 tbsp freshly chopped parsley or coriander
Zest of 1 lemon
125g Feta cheese - roughly crumbled
Salt and ground black pepper



  • Mix all the ingredients together in a large bowl
  • Using slightly damp hands, shape the mixture into four 9cm burgers
  • Cover and chill for 20 minutes
  • Cook under a medium grill or barbecue for 6-8 minutes on each side until thoroughly cooked and any meat juices run clear

To Serve

Serve with sourdough bread or similar, salad leaves and salsa

For the salsa:


1/4 cucumber - peeled and diced
2 ripe plum tomatoes - finely chopped
1 small red onion - finely chopped
50g black olives - halved
2 tbsp freshly chppoed flat-leaf parsley
2 tbsp freshly chopped mint
2-3 tbsp olive oil
2 tsp lemon juice



  • Mix all the ingredients together and set aside
  • The salsa can be mixed while waiting for your lamb burgers to chill
